Best Foods To Eat When It’s Hot

What To Eat When It’s Hot

I live in the Northeast, which is currently in the grip of a major heat wave that started last Saturday.  Our heat indexes are above 100.  Normal for some of you, but WAY not normal for us!

I figured eating is likely just as important as drinking in unusually hot weather, so I did a Google search on “what to eat when it’s hot”, and came up with a great article on WebMD.  Bonus!  It lists the “best summer foods for we ight loss”.  So, you stay cool, and stay slim, all at the same time!

Here they are, in no particular order:

1)  Chilled soups (mmm…cucumbers…)
2)  Watermelon (it’s half water!)
3)  Grilled veggies (toss in olive oil with some of those fabulous spice mixes or parmesan cheese)
4)  Salads (my new fave is McD’s Southwest)
5)  Light beverages (see their list)

Of course, nothing beats raw veggies and water!

A few of you remarked on my cucumber sandwich recipe from last week.  Add tomatoes!  Add onion!  Add bacon!  Hey, it was only a start…

The main goal when it comes to eating while it’s hot?

Avoid having to turn on the oven!

Recipe Of The Week

Not only does this look totally cool, it IS cool. And delicious!

Jellin’ Melon (from Kraftrecipes.com)

1 cantaloupe, cut lengthwise in half
3/4 cup boiling wate
1 package cherry gelatin
1/2 cup cold water

REMOVE seeds from melon halves; cut thin slice from bottom of each. Scoop out melon flesh, leaving 1-inch-thick shells. Place upside-down on paper towels to drain.

ADD boiling water to gelatin mix; stir 2 min. until completely dissolved. Stir in cold water. Refrigerate 15 min. or until slightly thickened. Pour into melon shells.

REFRIGERATE 3 hours or until gelatin is firm. Cut into wedges.
