New Summer Recipes

I knew it would be a few weeks before I could resume newsletters, as it was the busiest time of year…end of school, recitals, baseball, blah blah blah.
So today I went to write and queue up some newsletters, and realized I had never taken down the $27 sale price for “Real People Don’t Diet“!
Oops. As my kids like to say now, “my bad”.
So, because I’m such a good mood (school is over, dance is over, and baseball on a summer evening is fabulous), I’ve decided to extend the sale through this coming Monday.

Besides the 100th issue, there’s another anniversary Chris and I are celebrating this month. It’s been 4 years since we started our Real People Don’t Diet strategy…and we’ve kept off all our weight. In fact, I lost 5 more pounds this year.
I’ve developed a couple new snacks/meals that are helping us keep slim. They may be very basic–and not exactly original–but they’ve added some variety to our lunch and dinner menus, and are tasty, too.
Here they are…
Power Lunch Quesadillas
two wheat tortillas
fat-free refried beans
fresh chopped onion
Mexican-blend shredded cheese
Layer the refried beans, onions and cheese on a tortilla. Cover with second tortilla. Bake carefully in toaster oven, until tortillas are slightly crispy. Remove, cool, and slice with pizza cutter. Garnish with salsa, sour cream and black olives, if desired.
(This lunch gives you power protein and fiber. You won’t have those mid-afternoon blahs!)
Fresh Pork Lo Mein
pork sirloin, sliced thinly
Kraft low-fat Asian Sesame dressing
fresh colored peppers, sliced
fresh white onions, sliced
Barilla whole wheat spaghetti
Cook pasta according to directions and drain. Saute pork in small amount of dressing. Add veggies and more dressing and cook on medium heat for 3-5 minutes (cooked but crispy). Combine ingredients with pasta and serve hot.
